@assadajd: Dinner time with the loving Iranian couple who bumped into us at lunch and we are now sharing our next meal again with a few Persian classics like Tahdig, Kashke Bademjoun, Ash, Khoresh Bamein and of course Gormeh Sabzi!

@assadajd: Iranian Pizza or categorically labelled as ‘Fast Food’ across the country along with Burgers, Sandwiches and other western food items of quick consumption is unique with a tomato-less base, a delicate crust and locally available cheese.

Muharram, Iran
Nazri : نذری 

Iranians use the ancient Persian tradition of “Nazr” (distributing free foods among the people) to cook Nazri (food cooked for the sake of God and for the love of Imam Hussain) during Muharram and the Day of Ashura.

During Muharram, Nazri is offered to the poor, and distributed among neighbours and families, home by home.

The Day of Ashura is the 10th day of Muharram and marks the martyrdom of Imam Hussain; the most tragic day for all Muslims.

イランのイスラム教徒は、毎年、イスラム暦のモハッラム月が巡ってくると、シーア派三代目イマーム、ホサインとその教友たちの殉教を追悼する儀式を行い、敬意を払います。特に、この月の最初の10日間はイランの各市町村はその様相を変え、黒い服を着た団体が、黒い旗を掲げて町を練り歩いたり、集会を開いたりして、殉教者の長であるイマームホサインを追悼します。特に、モハッラム月の9日目のタースーアー、10日目のアーシュラーには町は様変わりし、多くの人が関連の儀式に参加するために外出します。

イマームホサインの追悼儀式では、儀式に参加している人々を持て成す習慣があります。季節や気候にあわせて、紅茶、ホットミルクなどの飲み物やナツメヤシが振る舞われます。中には、好意で、昼食や夕食を参加者のために作る人もいます。

タースーアーやアーシュラーの日には、料理の入った大鍋が町中で見られ、これらは、慈善の精神を持った人々が用意したものです。この二日間は、モスクなどの宗教施設や一部の住宅で大きな食卓が用意され、人々に料理が振る舞われます。(このように宗教行事で、無料で料理を振る舞うこと、またその料理をイランでは「ナズリー」と呼んでいます)

また、多くの人がナズリーとして屋外で料理を配ります。タースーアーやアーシュラーの日には料理をする家は少なく、多くの人が儀式に参加し、料理を受け取ります。

モハッラム月に、ナズリーとして用意される料理は、この「イランの食文化」でも、以前ご紹介したことのある煮込み料理ゲイメ、フェセンジャーン、そしてゴルメサブズィー(豆とハーブの煮込み料理)の他、チェロキャバーブ、アダスポロ(レンズ豆の炊き込みご飯)、アーシュ、ハリーム(小麦の煮込みスープ)、デザートのショレザルド(サフラン風味のライスプティング)などが一般的です。

イランの各地では、その地域の風土や慣習によってナズリーも異なります。例えば、カスピ海沿岸の北部の町では、揚げ魚とハーブ入りご飯がセットでよく出されます。また南部では、肉入りスープや魚の煮込み料理の他、「ランギナック」と呼ばれるナツメヤシ入りの砂糖菓子が並べられます。

Tahdig (Persian: ته دیگ‎, tah "bottom" + dīg "pot") is a specialty of Iranian cuisine consisting of crisp rice taken from the bottom of the pot in which the rice (chelow) is cooked.[6] It is traditionally served to guests at a meal.[7] Ingredients commonly added to tahdig include yogurt and saffron, bread, potato and tomato.

Variations of tahdig include placing thin vegetable slices at the bottom of the pot, so they crisp up instead of the rice, these vegetables include potato, carrots, and lettuce.[8] Iranians sometimes apply this cooking method to spaghetti as well, providing a hardened base.[9]
